Are all ingredients sprouted in Manna Breads?

Besides the wheat or rye, which we can fully sprout, we do soak all other grain and seed ingredients, but technically, they are not sprouting like wheat and rye does, which are two grains that grow the root and really “sprout”. But they are what we call ‘awakened’ by immersion in water. When they are ready to be put into the dough, all these grains and seeds are equally moist and soft as the wheat and rye berries.

Canadian stores

At this time, we only offer the online order feature to addresses in the USA. Because Manna bread does not contain preservatives, it needs to be transported and sold frozen. Frozen international transport to Canada or other countries is considered an export and requires a customs broker. Shipping cost is very high and therefore not an option for us at the current time. Nut butters, kale chips and other breads are not avaialbe in Canada.

 

Many of the organic and natural retailers in Canada carry Manna bread, we recommend calling ahead to find out if your preferred flavor is available.

Coupons, free shipping

We have a small family run and -operated wholesale bakery and do not currently offer coupons or free samples by mail.

In pricing our items, our goal is to create – and consistently offer – an everyday low price, instead of marking products up higher and giving some of that back during sales. We only run a sale once or twice a year, at rare occasions. We chose this path of fair, old-fashioned pricing, and attempt to charge a reasonable cost associated with a quality product.

Re. Cost of shipping: We charge what we have to pay UPS.  There is no handling fee or packaging material charge. We choose to not offer free shipping, because – just as any business that would offer shipping cost “free”, we would have to build the cost of shipping into products. 

How we ship

We have a lot of shelf stable products, which are not affected by the length of transit time. However, our breads are fresh and therefore have a shelf life of 1 year frozen, 3 weeks refrigerated and 5-6 days at ambient (room) temperatures. They can be re-frozen after thawing. In most cases, regular ground shipping is perfectly fine, especially in the months of Oct – March, when it is colder out.

After baking, our bread loaves are packaged in an inner, sealed wrapper and an outer poly bag. They leave our bakery frozen solid. The breads and other items are packed in a sturdy outer cardboard box. Depending on your preferred shipping method, the bread will begin to thaw in transit, or it may completely thaw. It is recommended to refrigerate or refreeze your Manna bread when it arrives. After shipping thousands of orders, customers have reported no problems with freshness, with many of them opting to refreeze their bread. You can keep the Manna breads in the freezer for a remaining shelf life of 6 months, and/or 8 days in the refrigerator.

To ensure the shortest possible transit time with UPS, we ship all orders with perishable items only on Mondays from our organic bakery in Lisle, IL – a suburb of Chicago. We also store the packed order carton in our freezer, and drive it to UPS just before they close, on the day of shipping, which helps in keeping the bread as cold as possible at the time of shipping. A tracking number is emailed to you on the day of shipping, when the package is turned over to UPS in the evening. 

Re. Cost of shipping: We charge what we have to pay UPS.  There is no handling fee or packaging material charge. We choose to not offer free shipping, because – just as any business that would offer shipping cost “free”, we would have to build the cost of shipping into products. 

The least expensive options is usually Ground Delivery. Shipping to a commercial address or business address is less expensive than a residence, because UPS charges a Home delivery fee.

We can’t provide rate quotes for UPS, because the rate is calculated by the UPS server according to your desired speed of delivery, or if you have the box shipped to a commercial or residential address. We invite you to run an order through the system. If you find shipping too high during your ordering process, you can cancel your order BEFORE making payment, by simply closing your browser window.

Is Manna Bread a raw food?

You may find this following statement of help to guide you whether Manna Bread is right for your diet. Some use Manna Bread to transition to a fully raw diet, Manna bread is near-raw but cannot be considered a truly raw food:

Manna Bread® is hand crafted from sprouted whole organic grains and slowly baked at a temperature much lower than conventional bread. It is not a raw food. The inside of the bread is moist and cake-like, surrounded by a lightly baked crust, to hold the bread together.

Precise specifications for sprouting, humidity, baking temperatures and length of oven time is proprietary.
All ingredients, such as carrots, raisins, nuts, seeds or herbs, are all certified organically grown. The sweetness of Manna Bread® is solely due to our unique sprouting process, which converts starches into maltose and other complex carbohydrates. There is no added sugar, no yeast, no salt, no preservatives, no oils or other fats.

Manna Bread discontinued in my store?

Unfortunately, Whole Foods Markets across the USA have chosen to discontinue Manna bread a few years ago, when new ownership decided on their product mix.

Please rest assured that we have NOT discontinued any of the 9 Manna bread varieties and could fill orders from distribution centers immediately. In fact, all of the varieties are for sale on our own web store.

The problem: Because Whole Foods is such a are a big customer, their distributor may have also discontinued Manna bread, which results in other smaller stores in the area not able to bring in Manna Bread anymore, even if they want to.  You can order from our web store at www.MannaOrganicBakery.com – the minimum order is $20. We do not mark up shipping rates, what we have to pay UPS is what we pass on.

Manna Bread shelf life

We use the Julian date coding system. This is a five-digit code, showing the date of manufacture. The first 2 digits are the calendar year, the remaining digits refer to the day of that year, on which the product was made. 
The date code is printed on the packaging clip, and also on the outside of the box (last 5 digits after the UPC code).
Manna Bread® is immediately frozen after baking, for optimal shelf life. Since it contains no preservatives, yeast etc, freezing protects the almost-raw loaves and ensures a nutritious bread when thawed. Manna Bread can be safely refrozen if thawed.

Nut Butter storage instructions

Our nut butters are crafted in small batches, and then immediately packed and sealed, for optimum shelf life and to lock in the flavors. They’re best kept in a cool, dry place, before and even after opening. They do not require refrigeration at any time if kept cool and dry. We recommend finishing the jar within 4 months after opening.

Organic/GMO definitions

Manna Organics is committed to producing quality organic foods, using the best ingredients available, while adhering to strict quality control procedures. Manna Organics is a family owned and independent organic food company.

The growing and processing of food in North America can be categorized as conventional, natural or organic- and there are vast differences between these three main groups.

 

USDA Organic labeling is broken down into 4 subcategories.

  • 100% Organic (contains 100% organic ingredients. E.g. a piece of fruit)
  • Organic (Contains 95% or more organic ingredients)
  • Made With Organic Ingredients (70% or more organic ingredients)
  • < 70% Organic Ingredients ( < 70% organic ingredients)

 

All Manna Organics products contain between 95% and 100% organic and are therefore certified “Organic”. 

The regulatory requirements needed to obtain this certification requires that our products do not contain Genetically Modified Organism (GMO)/ Genetically Engineered (GE) ingredients, artificial preservatives, artificial colors, artificial flavors or additives and the ingredients are not grown with toxic pesticides, chemical or petroleum based fertilizers or fumigants.

 Manna Organics products are certified organic by the US Department of Agriculture (USDA) National Organic Program (NOP).

Kale chip bags, snack crunchies bags, zip loc bags

Most municipalities are not set up to recycle a zip loc pouch with a window. These paper pouches have an inner plastic liner (barrier film, keeps out moisture) that is fused to the recycled craft paper, and cannot be separated. Also, the zip lok unit is of different plastic than the liner. 

These pouches are not ideal, and we are aware of the negative environmental impact. We are working on finding packaging solutions that are bio-degradable and more environmentally friendly, but we are not there yet. Thank you for helping keep this important topic on our radar!

 

Sprouted Nut Butters? Amaretto Almond Butter

Almonds can be either a sweet or bitter species. Our almonds are the sweet species grown in Spain. Bitter almonds are illegal in the US because they contain small amounts of cyanide. 

Since we make all of our Manna Butters by hand in small batches, the Amaretto Almond Butter can have slight variances from batch to batch due to the following factors:  

Manna Butters® are hand crafted and slowly processed at a temperature that is near-raw, but still food-safe. They are not a raw food.  Precise specifications for sprouting, humidity, dehydration temperatures etc. is proprietary. 

The making of our near-raw Sprouted Amaretto Almond Butter is a very delicate process wherein we take raw, organic almonds, soak them for many hours, rinse them thoroughly, and dehydrate them at raw temperatures. This creates a sweeter, crispier, and more nutrient dense almond with a flavor profile we like to call ‘amaretto’.

We choose to sprout our almonds because raw almonds have tannic acid and an enzyme inhibitor in their brown skin that protects the nut until the proper levels of sunlight and moisture allow it to germinate. Since the nut does not release its enzymes until those conditions have been reached, eating almonds without removing the inhibitor limits the nutrients your body can absorb and makes the almond difficult to digest. Sprouting almonds is also the only way to release lipase, an enzyme which digests fat. At Manna Organics, we typically source our almonds from Spain or Sicily, which is part of what contributes to their unique flavor profile. These almonds tend to have a brighter and sweeter flavor, and occasionally a bold ‘marzipan’ flavor.

What about allergens, cross contamination

We use tree nuts, soy, wheat and sesame in some of our recipes. 

We use organic whole wheat and rye berries in our sprouted breads, as well as wheat and rye flour in the sourdough breads. 

We use organic whole soy beans only in the Multigrain Sprouted Manna Bread. They’re fully sprouted when we use them, and highly nutritious, and of course GMO free as they are organic certified. 

We use whole organic tree nuts in all of our nut butters, kale chips and two of our sprouted breads (Fruit & Nut and Banana Walnut Hemp).

Sesame is used in our sprouted Fig, Fennel & Flax Manna Bread, Dreamy Tahini Kale Chips and Banana Coconut Snack Crunchies.  

We have an aggressive and thorough quality assurance system.  We also strictly adhere to GMP (Good Manufacturing Practices) with regard to storage and handling of raw materials.  Therefore, we take the utmost care in sorting, cleaning, handling and storage of organic raw materials to ensure highest quality.

 

What is Manna Bread?

Manna Bread is named after the heaven-sent Manna that sustained the Israelites as they wandered through the desert for fourty years. Manna Bread is remarkably simple and wholesome, best described as a unique, cake-like sprouted bread, made of all-organic and kosher pareve certified ingredients. It is not really a traditional sliced sandwich bread, but much more moist and can best be compared to a muffin. Tastes great toasted, with butter, nut butter or fruit spreads, or with soups, on salads etc.
