# Do you have Wheat Free and Gluten Free Manna Bread?

Because we use organic wheat berries as the main ingredient, and sprout them, there is naturally occurring wheat gluten in the bread.

We have a wheat-free bread called Manna Whole Rye, but it still contains naturally occurring gluten from the rye berries. 

# Is Manna Bread considered a Raw Food?

Manna Bread® is hand crafted from sprouted whole organic grains and slowly baked at a temperature much lower than conventional bread. It is not a raw food. Precise specifications for sprouting, humidity, baking temperatures and length of oven time is proprietary.

# why is the bread so sweet, if you don't use any sweeteners?

The sweetness of Manna Bread® is solely due to our unique sprouting process, which converts starches into maltose and other complex carbohydrates. There is no added sugar, no yeast, no salt, or preservatives. 

# Where can I buy Manna Bread?

Manna Bread® is sold throughout North America through natural food retail stores as frozen product. Most Whole Foods Markets, health food stores and co-ops carry Manna bread.

# Are you using tree nuts, soy, corn or sesame? How are they vegan?

We use almonds, hazelnuts, and cashews in our Fruit & Nut Manna bread. The Banana Walnut Hemp Manna bread contains walnuts.

We are very careful, follow Good Manufacturing Practices, and clean all food surfaces thoroughly between runs, but to be on the safe side, we recommend not using Manna Bread® for those who have allergies to tree nuts.

Organic whole sprouted soy beans are only the Multigrain sprouted Manna bread. It also contains organic polenta (corn meal).

Sesame seeds are used in the Sunseed and Fig Fennel Flax sprouted Manna breads. The only Gluten Free bread containing sesame is the The Open Sesame variety. 

We do NOT use peanuts or peanut oil in our facility. 

 

Our Gluten Free breads are free of soy, nuts, peanuts or oats. Because all our products are vegan, we do not use dairy, eggs, honey or shellfish in ANY of our products.

The gluten free breads do contain organic corn starch.

# What is the code on the bread clip?

We use the Julian Date code system, which is a Five-digit code, showing the date of manufacture. The first 2 digits are the calendar year, the remaining digits refer to the day of that year, on which the bread was made. Example: 10040: Year 2010, 40th day of the year = Feb. 9th

# Are Manna Sprouted Breads Gluten Free?

For our Manna sprouted breads we use organic wheat berries as the main ingredient for of our Manna varieties. By nature wheat berries contain gluten. We sprout them fully, for a few days. We have a wheat-free bread called Manna Whole Rye, but it still contains naturally occurring gluten from the rye berries.


However, fully sprouted grains are generally easier to digest. We recommend consulting your nutritionist or doctor about the benefits of 100% sprouted grains, and see if Manna Bread may be right for you.

 

We also offer a line of certified Gluten Free breads, which are organic certified and vegan.

# Do you use genetically modified ingredients in your products?

All of the ingredients we use in our products are GMO-free. The regulatory requirements needed to obtain the USDA Organic Certification mandate that our products do not contain any Genetically Modified Organism (GMO)/Genetically Engineered (GE) ingredients. 

# Why Sprouting?


• During the germinating process of grains, the starches that are in the endosperm convert into easily digestible natural complex sugars.


• As some of the grain’s energy is used in this process, sprouts have fewer carbohydrates, thus fewer calories than the legume or grain in its whole form.


• Phytic acid and enzyme inhibitors are neutralized: Phytic acid binds with calcium, magnesium, iron, copper, and zinc, which makes it very difficult for us to absorb these nutrients. While sprouting, the growing plant activates phytase, an enzyme that helps breaking the phytate bond, and dissolves phytic acid.


• Sprouting also increases the grain’s vitamin C and A contents, the vitamin B content, in particular B2, B5 and B6, as well as the amount of carotene significantly.

# How do we ship?

To ensure the shortest possible transit time with FEDEX, we ship all orders only Monday from our organic bakery in Lisle, IL - a suburb of Chicago. We also store the packed order carton in our freezer, and drive it to FEDEX just before they close, on the day of shipping, which helps in keeping the bread as cold as possible at the time of shipping.

By default, we ship to the address you entered on our www.mannaorganicbakery.com site, and not to your Paypal/Google Checkout address if different. If you need your package to go to a 3rd party, you need to send us an email to info@mannaorganicbakery.com, giving the 3rd party shipping address, and forward your payment confirmation email from either Google Checkout or Paypal.

HOW WE SHIP:

After baking, Manna Organics products are packaged securely to ensure the best freshness possible. They leave our bakery frozen, and we pack them in a sturdy box, adding biodegradable packing chips for insulation. Depending on your preferred shipping method, the contents will begin to thaw in transit, or may completely thaw. It is recommended to refrigerate or re-freeze your Manna Organics products promptly upon arrival. This is important, since we do not use any preservatives in our recipes, in any of our products.

To ensure the shortest possible transit time with FEDEX, we ship all orders only Mondays, excluding Holidays. This is for orders recevied through Sunday,11:59 pm (by midnight) CST

Please note that Manna Organics, LLC does not guarantee that the bread arrives frozen. No returns or exchanges. All sales are final.

 IF YOU CHOOSE GROUND SHIPPING:

Although most packages we ship via Ground delivery reach their destination within a few days, it is possible for your shipment to be in FEDEX transit up to  two weeks after we ship. Please understand that WE WILL NOT BE RESPONSIBLE for your order delivered after its intended shelf life. This is especially applicable from May to October, when it's warm out. Your shipment is going over the road in the back of an non-airconditioned truck.

Again, please be cautioned about choosing Ground shipping.

# Shipping Rates:

We ship via FEDEX (you choose how fast to get it. The most economical shipping method is FEDEX Ground or Home delivery, takes 2-4 business days and runs approx. $10-14, depending on the address). We do not have free shipping. We do not mark up shipping rates, whatever FEDEX charges us, we charge you. There is no additional handling fee.

# International Shipping

At this time, we only offer the online order feature of Manna Bread® to addresses in the 48 continguous states in the USA. Because Manna Bread does not contain any preservatives, it needs to be transported and sold frozen. Frozen international transport to Canada or other countries is considered an export and requires a customs broker. Shipping cost is very high and therefore not an option for us at the current time.

# Are the Gluten Free breads certified?

Our Gluten Free breads are GF certified. We work very closely with the Gluten Free Certification Organization (GFCO). The GF symbol on the breads give you the confidence you need to enjoy real tasting vegan organic certified breads, that are also Gluten Free.

# Is your facility dedicated Gluten Free?

No, our facility is is not dedicated gluten-free. However, we bake our gluten-free breads on separate equipment and on separate production days, by bakers who have been trained and passed an allergen food baking test.

We test our incoming raw material lots for gluten, follow a rigorous cleaning protocol, test all food contact surfaces for gluten before production begins, and test each batch as well as use frequent independent Third Party Lab verification to make sure that our products are well below 10 ppm of gluten before shipping the breads. We have dedicated GF mixers, bowls, bread pans, and packaging equipment, which is used for Gluten Free bread baking only, and is stored in a sealed storage room.

Amaranth - cooking time: 20-25 min.

Brown rice - cooking time: 45-55 min.

Buckwheat - cooking time: 15 min.

Cornmeal, Polenta - cooking time:  8-10 min. fine grind, 20-25 min course grind

Millet - cooking time: 20-25 min.

Quinoa - cooking time: 20-25 min.

Sorghum - cooking time: 45-55 min.

Teff - cooking time: 15 min.
